This Instant Pot Chicken Stew Recipe is perfect for an easy Sunday dinner or a weeknight meal. One of my favorite things about cooking in the Instant Pot is the simplicity of “dump and start” recipes. This stew is hearty and warm, and comes together about 30 minutes. Instant Pot Chicken Stew

- 1 onion, chopped
- 2 garlic cloves, minced
- 3 lbs chicken breast, cubed
- 3 lbs red potatoes, cubed
- 2 cups baby carrots, halved
- 2 cans corn, drained
- 4 cups chicken broth
- 1 cup half & half
- Seasonings of your choice - I prefer salt, pepper, and thyme
Instructions
- Turn your pot to Saute
- Add onion and garlic and cook until fragrant and onions are transparent
- Add cubed chicken and give it a quick stir to lightly brown
- Add potatoes, carrots, corn, and broth
- Cook on high pressure 10 minutes
- Allow a 5 minute natural release, then quick release
- Stir in half & half to incorporate
- Serve with crackers, bread, or with nothing at all
